Do you like to make sure your family is well fed when you’re away from home? I strive to feed my family healthy and nutritious meals so when this Momma is planning to be away, I stock up by making my favorite freezer meals. I am guilty of feeling bad when I go out to dinner with a girlfriend. Yes, guilty. Guilty of having a little much-deserved “me” time. I make myself feel better and let go of that guilt by providing a nice meal for my husband and kids while I’m gone or to help out the sitter we leave in charge when we go out as a couple. Some weekends I cook a few meals and freeze them for those nights when I’m throwing on a pair of heels and breaking out the make-up. I also have attended the Food Wine Conference each year and have had a few weekends away with my husband so it’s very convenient to have those meals to pull out for a sitter or the grandparents.
Some of my friends think I’m crazy worrying about what my kids will eat while I’m away. Don’t get me wrong, there are times I throw my hands in the air and say “you’re on your own, sweetie” as I grab my keys, hop in my car and head to the gym. Those days are when I’ve had the children for 48 hours straight because of my husband’s work schedule, but for the most part I like to have freezer meals ready for those kinds of nights.
A few years ago my husband and I went away for the long weekend. I had my freezer meals ready for my mother-in-law with the cute little sticky notes marking each one with what day of the weekend to pop it in the oven. I came home and they were all still there. At first I was upset but then I realized that grandmothers need to be grandmothers and pizza, hot dogs and a night out to their favorite restaurant was what made the kids and her have a great weekend together. Now I take a few freezer meals off of my to-do list before leaving for a weekend away when their grandmother’s in charge!

Spinach & White Bean Pot Pie by Momma’s Meals
Pot pies freeze so well! This dish is a great way to get those veggies in and it’s simple for Dad or anyone to pop some canned biscuits on top for the last 10 minutes of baking time and voilà, dinner is served!
Slow Cooker Salsa Chicken & Black Beans by Cupcakes and Kale Chips
Who doesn’t love having tacos, nachos, enchiladas or rice bowls all ready to go! Freeze up a batch and the kids can have fun making their own tacos or nachos while Mom is away.
Three Cheese Broccoli Pasta Bake by Momma’s Meals
You can’t go wrong with freezing pasta. This is an easy recipe to make a double batch of one night. Stick the other batch in the freezer and Dad can pull out the casserole and throw it in the oven and you won’t feel guilty because you will know your kids are getting their veggies in!

My mom freezes meatloaf all the time still! This meaty recipe is another great way to get your kids to eat some veggies. Pull out a meatloaf and leave the instructions for the sitter and dinner is served.
Kid Approved Pumpkin Pasta by Momma’s Meals
I went on a sauce frenzy last Fall because my kids are plain, like “nothing but butter on my pasta, please, Momma” kind of plain! This one was a big hit because it had a sweeter taste to it and I even snuck those peas in there with hope that they would actually digest some. Success! I freeze all kinds of sauce because even my husband can boil water and cook pasta while I’m away.
