2 tablespoons olive oil, divided
1 pound thin sliced chicken cutlets
1 pound butternut squash, cut into 1/2 inch cubes
4 slices center cut bacon
1 small shallot, finely diced
2 tablespoons apple cider vinegar
1/3 cup chicken stock
1 tablespoon pure maple syrup
6 to 8 ounces bag baby spinach
