It’s also great for a #WeekdaySupper because you start with frozen chicken and can set your slow cooker early in the day and get on with your life while it cooks.

Something about football season always has us craving buffalo chicken.
Wings. Dip. Sandwiches. You name it.
But, when we finally decided to whip up a batch of our own buffalo chicken, the recipes we found made me think, “Really. Are you sure?” A sauce that’s just as much butter as hot sauce?
Now, game day food isn’t supposed to be health food. That’s a given. And, I’ve eaten my share of those buttered up buffalo wings. (And probably licked the plate clean!) But, I wondered if we could find a way to make buffalo chicken just as tasty, but not leave us feeling quite so greasy.
By combining tomato paste, a little molasses, spices, and some of our favorite hot sauce, we were able to fill the house with the tangy scent of spicy goodness, and enjoy some fall-apart chicken that gave us just the buffalo kick we were looking for.
Blue cheese is the perfect complement to this chicken, and with such an intense flavor, a few crumbles really go a long way.
The recipe below makes a pretty good sized pot of chicken. Perfect for a crowd! But if you have leftovers, the chicken can be transformed into a fantastic filling for some Buffalo Chicken Stuffed Peppers.

- 3 lbs boneless, skinless chicken breast, frozen
- 1 medium onion, diced
- 1 garlic cloves, minced
- 1 (6 oz) can tomato paste
- 2 Tbsp white vinegar
- ¾ cup hot sauce (of your choice)
- 4 Tbsp Worcestershire sauce
- 1 Tbsp molasses
- 1 ½ tsp paprika
- Tabasco sauce to taste
- Place frozen chicken and onions in a 4 qt or larger slow cooker.
- Mix together remaining ingredients (except Tabasco) and pour over chicken.
- Let cook on low for 6 hours or on high for 3 hours.
- Remove chicken to a plate and shred with two forks.
- Return to slow cooker and continue to cook on low for an additional hour. (If there is too much liquid, leave the cover off.)
- Serve over buns with blue cheese or ranch.
