5 ounvrd salami, cubed
3 large shallots, sliced
1/2 cup Kalamata olives, sliced
2 medium tomatoes, seeded and sliced
1 cup (packed) fresh spinach, cut
1/2 cup Parmigiano Reggiano
1 cup Emmenthal cheese
1/2 teaspoon black pepper
1/2 teaspoon salt, more to taste
1 teaspoon dried Italian herbs
1-2/3 cup plain soy creamer (or half & half)
