Today on Sunday Supper Super Stars: Laura from Small Wallet, Big Appetite
Who is Laura: I am the writer of Small Wallet, Big Appetite a blog that evolved out of my husband and I’s journey of tackling our out of control food budget. A lot has changed and happened since I started this blogging journey, we moved to the UK, had our first child and are now expecting our second later this year. But my love for food hasn’t changed; in fact having an expanding family has only intensified my passion for food.
I am not sure if the road of budgeting always leads people to cleaner eating, I was always told that if you were on a tight budget you couldn’t. But I am happy to say I have not found that to be true. In my budgeting research, I discovered that the processed, cheap food that I had come to depend on at one point had very little nutritional value and you have to eat a large portion of it in order to feel full. Where as when I stared cooking from scratch with whole ingredients, we found we were eating better and less. It is my goal in life to encourage people to try to start cooking more meals from scratch and to hopefully pass it on to younger generations, a tradition that has been lost in modern life.
Her favorite #SundaySupper theme (or recipe) so far: My favourite theme so far was the one on my birthday this year, the Food Adventures. The reason this was my favourite is because it challenged us to push ourselves, whether it was trying a new cuisine or just a difficult recipe that we have wanted to try; all of us pushed our own comfort zone. With that encouragement, we push ourselves to be better. For this theme, I chose to do something that has been on my bucket list to try for years Pork Dim Sum, and I was so happy it turned our even better then I imagined.
Her most popular #SundaySupper post: My most popular #SundaySupper post so far is my Grilled Fish Tacos withBlack Bean and Corn Salsa, our Mexican Independence Day theme. And I can’t blame the love because it was so good. I am happy to say I have won over my English family, who thought fish tacos sounded a bit odd, and it has become a summer grilling standard.
-I have lived on 3 different continents
-I have visited 49 of the 50 states in the US, the last one being Alaska which I hope to visit with my family in the near future.
-I have visited 14 different countries, which for most would be amazing; only in my family would that be a pathetic amount, with my dad at over 50 and each of my siblings, who are younger than me by the way, at almost 30 countries.
-At 21 I became the youngest Assistant Store Manager for Starbucks in the district that I worked in.
