Thai Shrimp Curry
1 1/2 cups coconut milk
1/4 cup chicken stock
3 tablespoons Thai red curry paste
1 tablespoon brown sugar
2 teaspoons fish sauce
2 teaspoons ginger paste
2 teaspoons lemongrass paste
2 tablespoons vegetable or canola oil, divided
1 pound large shrimp, peeled and deveined
4 cups assorted cut-up vegetables (such as onion, bell pepper, snow peas, broccoli, carrots, green beans, etc.)
2 tablespoons thinly sliced fresh basil (Thai basil recommended)
4 cups cooked rice
1 lime, sliced into wedges
