Our bodies tend to crave sugar around this time of day but if you don’t want your child to crash and burn during homework, think high protein and low carb when preparing after school snacks. These Cucumber Egg Salad Bites are designed to satisfy little tummies and taste buds while avoiding a spike in blood sugar. Because what goes up can only come down. Hard. Homework time is hard enough. Let’s save the sugar for dessert time when we can give our brains a much-deserved break.
And let’s not forget the adults. Big kids need snacks, too.

- 2 Hard Boiled Eggs
- 1 Tablespoon Greek Yogurt Plain
- 4 Gherkins diced
- 1 pinch salt
- 5 to 6 1/4- inch cucumber slices
Peel eggs and, in a small bowl, break them up using a fork.
Add yogurt, gherkins and salt to eggs and combine well with the fork.
Using a melon baller (or spoon) scoop egg salad onto cucumber slices and serve.
- Cooking time includes hard boiling the eggs.
- I like to leave the skin on the cucumber so I use those long, wrapped hothouse cucumbers. I like the texture of the skin and they aren't too seedy. But any cucumber works.
