Serves: 3 dozen
  • 1 egg white
  • 1 cup, packed, or 200g brown sugar
  • 1 teaspoon vanilla
  • 2 cups, chopped, or 225g pecans
  1. Preheat your oven to 275°F or 135°C and line your cookie sheets with baking parchment or silicone liners.
  2. Beat your egg white in a clean mixing bowl until stiff peaks form.
  3. Mix in the brown sugar.
  4. Fold in the chopped pecans and the vanilla.
  5. Drop by heaped teaspoons on to the prepared cookie sheets.
  6. Bake for 23-28 minutes or until puffy and cooked through.
  7. Leave to cool for a few minutes and then transfer with a spatula to a wire rack to cool completely.
