Only one pot is needed to make Tex-Mex Beef Rice Skillet. It’s loaded with black beans and tomatoes with a touch of chili spice and jalapeño pepper. It’s quick, easy, and healthy too!
Raise your hand if you dislike doing the dishes. Both of mine are raised and waving like crazy. I laugh remembering those old futuristic TV commercials of self-cleaning kitchens. Someone still needs to invent it. Anyway, washing dishes is an unavoidable part of cooking. Reducing the amount of dishes is a total can-do situation with certain meals. Tex-Mex Beef Rice Skillet happens to be one of those meals.
Time is another factor. With kids back in school, time becomes crimped each and every day. Getting a tasty meal on the table fast is a good thing. Somewhere around 30 minutes is a goal. Tex-Mex Beef Rice Skillet is a healthy meal. Lean ground beef gives you needed protein, vitamins, and minerals. Brown rice is a whole grain. Black beans, tomatoes, and jalapeño peppers provide vegetable goodness and many more vitamins and minerals. (Okay, technically tomato is a fruit and that’s a good thing too). Cheese drops in calcium for strong bones.
It’s a flavor fiesta too! Chili powder brings a little heat to the mix. You can increase or decrease the amount of it based on your heat and spice preference. Ditto for the jalapeño pepper. The recipe below is for a medium heat level. To make it mild, use 1/2 or 1 teaspoon chili powder and substitute bell pepper for jalapeño.

Tex-Mex Beef Rice Skillet is so perfect for an easy dinnner
- 1 pound lean ground beef 93% lean or leaner
- 3/4 cup chopped onion
- 1 1/2 teaspoons chili powder
- 1 teaspoon salt
- 1 garlic clove minced
- 1 15- ounce can black beans rinsed and drained
- 1 14.5- ounce can diced tomatoes undrained
- 3/4 cup instant brown rice
- 1 cup low-sodium beef broth
- 1 jalapeño pepper seeded and chopped
- 1 cup shredded pepper jack or cheddar cheese
- 2 tablespoons chopped fresh parsley or cilantro
In a large skillet or sauté pan, cook ground beef, onion, chili powder, and salt. As it is cooking, stir and break up beef to crumble it, until beef has browned, about 5 minutes.
Add garlic, black beans, tomatoes (with juice), rice, broth, and jalapeño. Stir to combine.
Bring to a boil. Cover and reduce heat to medium-low. Simmer for 20 minutes, stirring after every 5 minutes.
Serve topped with cheese and parsley.
