Preheat oven to 450°F. Pat room temperature roast dry using paper towels, then rub all over with salt and pepper.
Place on a pan with a roasting rack. Add it to the oven for 15 minutes. Reduce temperature to 325°F. Cook for 1 hour and 40 minutes
Once the beef is done, remove it from the oven and transfer to a cutting board. Loosely tent the beef with foil.
