Amazing Strawberry Swirl Cheesecake
Preheat oven to 325°F. Crush graham crackers in a food processor. Add to a bowl with cinnamon, ginger, and butter, and mix.
Press firmly into the bottom of the prepared tin. Bake for 10 minutes, then set aside.
Beat cream cheese on low-med speed for about 2 minutes. Add sugar and vanilla, and mix through. Scrape down sides of the bowl as necessary.
Mix in the eggs and egg yolk.
Finally, add salt, sour cream, salt, lemon juice, and lemon zest. Mix until smooth and glossy.
Pour half the mixture over the crust. Dollop half the strawberry sauce over top, then cover with the remaining half of the mix.
Dollop remaining strawberry sauce and swirl using a knife. Bake 45-50 minutes on the middle shelf of the oven.
Let it rest in the oven for 30 minutes with the door closed, then out of the oven for another 45 minutes. Finally, let it set for 4 hours.
