Chicken Cordon Bleu

With creamy Parmesan sauce!


For the Cordon Bleu Chicken – 4 Chicken breasts – 2¼ cups Sliced Swiss cheese – 1½ cups Thinly sliced ham – Salt and pepper – 2 eggs – ¾ cup of flour – ¾ dry breadcrumbs


For the Cordon Bleu Sauce – 4 Tbsp. butter – ¼ cup flour – 1½ cups 2% milk – ½ cup grated Parmesan

Step 1

Tip dry breadcrumbs onto baking tray and spread evenly. Place in preheated oven (350°F) and bake for 10 minutes until golden brown. Check at 5 minutes and stir.

Step 2

Lay out a large piece of plastic wrap and place the chicken breast on top. Place second piece over the chicken. Take a rolling pin or tenderizer and flatten the chicken.

Step 3

Lay out the flat chicken breasts side by side and top each one with a layer of Swiss cheese, then a layer of ham.

Step 4

Roll up each breast into a pinwheel with the cheese and ham on the inside.

Step 5

Place the flour in a bowl, whisked eggs in another, and toasted breadcrumbs in a third. Roll each chicken in the flour until fully coated.

Step 6

Roll the floured chicken in the whisked egg. Finally, place into the breadcrumbs and fully coat all over.

Step 7

Place each chicken onto a piece of plastic wrap. Roll tightly and seal off the ends. Then, roll the chicken into a nice round cylinder shape. Refrigerate 30 minutes.

Step 8

Place a small pan on low to medium heat.  Add butter and allow to melt. Once it melts, add flour and stir into a roux.

Step 9

Slowly begin adding milk. Add gradually and continuously stir to prevent lumps. Stir until sauce thickens. When it simmers, remove from heat.

Step 10

While the sauce is still hot, add Parmesan and stir in until it melts and the sauce is smooth.

Step 11

Preheat the oven to 350°F. Unwrap the chicken and place on baking tray. Bake for 35 minutes, or until chicken is hot and cooked through.

Step 12

Once the chicken is cooked remove from the oven and slice. Plate up and drizzle over the creamy Parmesan sauce. Serve and enjoy!
