Zucchini Brownies
with coconut oil

ingredients
melted coconut oil dark chocolate chips grated zucchini packed brown sugar granulated white sugar vanilla extract egg all-purpose flour cocoa powder salt coarse sea salt, optional
Preheat oven to 350°F. Line a 8×8-inch pan with parchment paper and spray with cooking spray.

Microwave oil and 1 cup chocolate chips in a glass microwave-safe bowl in 30 second increments, stirring each time.

Grate the zucchini with a food processor or cheese grater. Place the shreds in bowl with chocolate/oil mixture.

Add sugars and vanilla. Mix well. Beat in egg. Sift in flour and cocoa powder, add salt, and fold together with a spatula. Finally, add in remaining chocolate chips.

Spread in prepared pan. Sprinkle coarse sea salt over top, if desired.

Bake for 28 to 30 minutes, or until a toothpick inserted comes out with moist crumbs.

Allow to cool slightly, cut into slices, and serve!
