Caramel Apple Empanadas

Made this for my boyfriend’s birthday and he LOVED IT! He said it reminded him of the Taco Bell empanadas but waaay better!  -@sassypants

Crust:  all-purpose flour granulated sugar salt unsalted butter  cold water Filling: apples  lemon juice caramel vanilla extract ground cinnamon ground cloves salt

The best part?

They are the best caramel apple hand pies ever. Just like mini apple pies!

 In a food processor, combine the flour, sugar, and salt. Pulse in the cubed butter.

Mix in water to create a smooth dough. Form into a disc, wrap in plastic and refrigerate.

Toss apples with lemon juice. In a saucepan, stir together the apples and caramel over medium heat.

Simmer and cook for 15-20 minutes. Stir in the vanilla, cinnamon, cloves, and salt. Remove and allow to cool.

On a floured surface, roll the dough into a thin sheet. Cut out circles of dough.

Place the apple filling in the center. Fold the dough over the filling and press the edges together to seal completely.

Place on a parchment-lined baking sheet. Refrigerate for 20 minutes.

Preheat oven to 375˚F. In a  bowl, beat together egg and water. Brush over the tops of the empanadas. Sprinkle with cinnamon sugar.

Bake for 20-25 minutes. Allow to rest for 5 minutes before serving. Enjoy!
