MEXICAN LASAGNA WITH TORTILLAS

Heat a pan over medium heat with olive oil. Once hot, add 2 pounds of ground beef and break into pieces. Cook until browned.

Combine cooked ground beef with taco seasoning, 3/4 cup water, and 1 cup green onions. Stir in 16 oz. salsa and 1 cup corn until well-combined.

Spray a 9"x13" pan with non-stick spray. Begin layering lasagna by placing a layer of tortillas along the bottom.

Top with 1/3 of the diced hatch chiles, ground beef mixture, Mexican cheese blend, and enchilada sauce.

Repeat layers twice in that order, topping it all off with cheese.

Cover with foil and bake at 350°F for 45 minutes. After 45 minutes, remove foil and bake an additional 10 minutes.

Allow taco lasagna to sit, loosely covered, for 10-15 minutes before serving. Top with chopped green onions and fresh diced tomatoes, if desired. Serve and enjoy!
