Cook onions and celery in a skillet until they soften and brown.

Add chorizo and garlic and cook, stirring, until brown and crispy.

Add ground beef and break up, cooking until browned.

Season, then add chicken stock and cornbread. Stir until mixed and add butter.

Spread the cornbread stuffing in a greased casserole dish and bake for 30 minutes.
