Ready in less than 20 minutes using simple ingredients, this is the perfect Labor Day side dish!
Even the eggs hard boil with the potatoes so you don’t have to cook anything separately.
Add potatoes, water, and eggs to the Instant Pot and pressure cook on high for 4 minutes. Quick release when done.
Remove, peel, and chop the eggs. Drain the water from the pot, then add the eggs back along with celery and onion. Mix.
Add mayonnaise, vinegar, salt, pepper, and sugar to a bowl and mix well.
Add the dressing to the potato mixture.
Mix everything together until fully incorporated. Serve chilled, and enjoy!
