Add peppers and onions to a skillet over medium heat. Add garlic powder, and cook until golden brown, about 7-9 minutes. Season to taste with salt and pepper.
Spray a pan or griddle with nonstick spray on medium-low heat. Place tortillas in the pan, and top them with pulled pork, cheese, and the sauteed peppers and onions.
Top with another layer of cheese, then a second tortilla. Cook until the cheese melts, then carefully flip. Letting the cheese melt makes flipping much easier!
Cook for 5-8 minutes, until the cheese is completely melted and the tortillas are a nice golden brown on each side. Serve, and enjoy!
