Combine butter, broth, Italian seasonings, salt, and pepper in a bowl, and warm it in the microwave until everything is combined. Then whisk in the cornstarch until smooth.
Slice the carrots and potatoes, then layer them on the bottom of the crock pot. Add in the pork chops, then add sliced onions on top.
Pour in the seasoning and broth mixture, then set the slow cooker to LOW and cook for 5 hours.
Once cooked, serve the pork chops alongside the cooked vegetables and sauce, and enjoy!
