Salt roast all over the day before you plan on cooking it and refrigerate overnight, uncovered.
Preheat oven to 200°F. Place roast on rack in roasting pan. Rub all over with oil and black pepper.
Place in the oven for 4 hours. Remove roast and tent with foil to rest. Turn oven temp up to 500°F.
Once the oven reaches 500°F, remove foil and put the roast back in. Cook for 10-15 minutes.
Transfer to a cutting board and rest for 15 minutes before serving. Enjoy!
