SPANISH POTATO SALAD

– Red potatoes – 4 eggs – Spanish olives – Fresh chives – Mayo – Whole grain mustard – Lemon juice – Smoked paprika – Garlic powder – Onion powder – Salt adjust to taste – Pepper adjust to taste
Place potatoes in a pot. Add water, making sure it covers the potatoes. Cook potatoes until easily pieced with a fork. Drain and set aside.
Place eggs in a sauce pan. Cover them with water. Bring the water to a boil. Remove the eggs and cut into small pieces.
Add mayo, whole grain mustard, lemon juice, smoked paprika, garlic powder, onion powder, and a pinch of salt and pepper to a small bowl.
In a large bowl add potatoes, eggs, olives, and chives.
Drizzle the dressing over the ingredients and mix together. Stir until well combined.
Garnish the salad with the egg slices, a few extra olives, chopped chives, and a sprinkling of smoked paprika.
