The Best Chicken & Leeks

You will need...

Olive Oil Chicken breasts Salt and pepper Juice from half a lemon Leeks  Garlic  Flour Chicken stock Milk Ground Mustard Sour Cream Fresh tarragon leaves

They cook quickly and are always a favorite with my kids!

Flour Bowl

Place plastic wrap around the chicken, then pound the with a rolling pin to flatten the meat.


Drizzle oil over one side of the chicken and then season with salt, pepper and lemon juice. Flip and repeat.


Place a pan on the stove and add the chicken. Cook on each side for 2-3 minutes. Then remove and set it on a plate.


Add oil and gently fry the leeks. Add garlic and stir. Stir in flour and then gradually add the stock and milk.


When the broth starts to simmer return the chicken to the pan and cook with the lid on for 20 minutes.


Stir mustard and sour cream into the chicken and leek broth. Finish by stirring in fresh tarragon leaves. Enjoy!
