  • 4 large onions chopped, we used Vidalia onion, a sweeter onion is key
  • ¼ cup olive oil
  • 4 sprigs thyme
  • 2 bay leaves
  • 8 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon black pepper
  • 2 teaspoon salt

Toasts Ingredients

  • 6 slices French bread or baguette
  • 1 cup mozzarella cheese shredded

Instructions

  • Set your Instant Pot to saute mode. Add in oil and allow it to get hot, about 1-2 minutes.

  • Add in chopped onions, and allow to sauté for 5-8 minutes, stirring occasionally. Your onions should be softened and have a little brown coloring to them.

  • Stir in beef broth, Worcestershire sauce, salt, and pepper.

  • Place bay leaves and rosemary spring in your Instant Pot and secure with the lid.

  • Pressure cook on high for 5 minutes. Let your pot naturally release pressure for at least 15 minutes after cooking.

  • Release any excess pressure and remove the lid. Remove herbs from the pot immediately.

  • Preheat the broiler on your oven to high and line a baking sheet with aluminum foil. Using oven-safe bowls, fill them with your french onion soup to about ½-inch from the top.

  • Place bowls onto your prepared baking sheet. Top soup with a slice of bread, and shredded cheese.

  • Broil for 3-5 minutes or until the cheese begins to bubble and turn golden brown.

Notes

  • If you want to make this Instant Pot French onion soup vegetarian, you can substitute the beef broth for vegetable stock or broth. You can even substitute the cheese for a vegan option!
  • Don't have broiler-safe bowls? You can toast the cheesy bread separately, then add a slice to each bowl of soup before serving.
  • Using a sweeter onion is key for this French onion soup, but you can use white onions if that is what you have on hand.
  • Swap out shredded mozzarella cheese for gruyere, Swiss or provolone.
  • Slow cooker French Onion Soup? After caramelizing the onions, add all the ingredients into a crockpot and cook on low for 8 hours or on high for 4-5 hours.
