Mushroom Grilled Cheese

The best of the best gourmet grilled cheeses: Mushroom Grilled Cheese, complete with garlic butter mushrooms, melty cheese, and perfectly crisp bread!

For mushroom filling

  • 3 ounces mushrooms of choice
  • ¼ Tablespoon butter
  • 1 clove garlic minced
  • salt and pepper to taste
  • ¼ Tablespoon parsley or to taste

For mushroom grilled cheese

  • garlic butter mushrooms (above)
  • 4 slices cheese I used provolone
  • 1 Tablespoon butter softened
  • 1 teaspoon Italian seasoning
  • 2 slices bread of choice

Instructions

  • Heat a skillet to medium heat. Melt butter, then saute mushrooms for 2-3 minutes and season with salt and pepper. When soft and golden brown, remove from heat and add parsley.

  • Butter one side of each slice of bread. Flip one of the slices over.

  • Add 2 slices of cheese, then top with garlic butter mushrooms, Italian seasoning, and 2 more slices of cheese.

  • Add the other slice of bread, buttered side up.

  • Air fry at 350°F for 5 minutes on one side. Flip, then cook for an additional 5 minutes. To make in the oven instead, place on a baking sheet and bake for 5 minutes on each side at 450°F.

Notes

  • Try other cheeses according to your preference! For a spicy mushroom cheese sandwich, you could use pepper jack cheese. If you like yours even creamier, you could use a rich cheese like gruyere and cut it with the sharpness of a slice of white cheddar.
  • Use whichever mushrooms you like best. I used garlic butter button mushrooms for this recipe, but you could even use pan-fried portobello mushrooms.
