Heat a skillet to medium heat. Melt butter, then saute mushrooms for 2-3 minutes and season with salt and pepper. When soft and golden brown, remove from heat and add parsley.

Butter one side of each slice of bread. Flip one of the slices over.

Add 2 slices of cheese, then top with garlic butter mushrooms, Italian seasoning, and 2 more slices of cheese.
Air fry at 350°F for 5 minutes on one side. Flip, then cook for an additional 5 minutes. To make in the oven instead, place on a baking sheet and bake for 5 minutes on each side at 450°F.

Try other cheeses according to your preference! For a spicy mushroom cheese sandwich, you could use pepper jack cheese. If you like yours even creamier, you could use a rich cheese like gruyere and cut it with the sharpness of a slice of white cheddar.
Use whichever mushrooms you like best. I used garlic butter button mushrooms for this recipe, but you could even use pan-fried portobello mushrooms.
