Ingredients

  • 3 cups white rice cooked, cold
  • 2 cups ham chopped or diced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 Tablespoon minced garlic
  • 0.5 cups olive oil
  • 2 green onions chopped
  • 0.5 cups ham bone broth or chicken broth or vegetable broth
  • 4 eggs
  • 1 Tablespoon soy sauce

Instructions

  • In a skillet over medium heat, add 0.5 cups olive oil. Once the pan is hot, add 1 Tablespoon minced garlic and cook 1-2 minutes or until fragrant.

  • Add 1 cup frozen corn and 1 cup frozen peas. Saute another 2-3 minutes.

  • Mix in 2 cups ham and heat for 2-3 minutes.

  • Add 3 cups white rice to the skillet and cook 5 minutes, or until heated through.

  • Mix in 0.5 cups ham bone broth and 1 Tablespoon soy sauce, then top with 2 green onions. Stir to combine completely.

  • Create a hole in the center of the fried rice by pushing it to the edges of the pan. In the center, crack 4 eggs and whisk together to scramble.

  • Once scrambled, mix the eggs with your rice. Serve, and enjoy!

Notes

  • Whether you're using leftover rice or you made it the same day, your rice should be completely cold before adding it to the skillet. This prevents the rice from clumping together.
  • Long-grain rice works best for fried rice; the flavor of jasmine rice is very good with ham.
  • Fried rice is a great way to use all kinds of leftovers and vegetables - try adding in cooked bacon, asparagus, broccoli, carrots, or whatever you like best.
  • You should not need to add any extra salt and pepper, but taste before serving and add more if desired.
  • A little sesame oil goes a long way for flavor. Use a teaspoon or two if you'd like to add sesame oil.
