Baileys Fudge

This Baileys Chocolate Fudge is smooth and creamy with a delicious hint of Irish Cream. So easy to make, and the perfect dessert for your New Years Eve Menu.

Ingredients

  • 18 oz semi-sweet chocolate chips
  • 14 oz sweetened condensed milk
  • 1 tablespoon corn syrup
  • ¼ cup Baileys

Instructions

  • Line an 8x8 inch square pan with parchment paper or line with aluminium foil and grease lightly.
  • Using a double boiler, add 1 inch of hot water to the lower pot. If you don't have a double boiler, in a medium saucepan add 1 inch of hot water. Place a large glass bowl over top, ensuring that the bottom of the bowl doesn't touch the hot water.
  • Heat the double boiler over low heat.
  • Add the chocolate and sweetened condensed milk to the upper pot of your double boiler or the glass bowl. Gently stir as everything melts together.
  • Once fully melted, remove the the upper pot/glass bowl from the burner and stir in the corn syrup. Then vigorously stir in the Baileys.
  • Pour the mixture into the prepared pan and allow to chill in the fridge for 4 hours.
  • Cut into squares and serve.

Notes

Melting the fudge:We recommend using a double boiler for making fudge because it melts the chocolate more evenly. You'll melt together chocolate chips and a can of sweetened condensed milk over low heat. Gently stir to ensure everything melts together smoothly.
Chocolate for fudge:We recommend using semi-sweet chocolate chips for this recipe because the flavor is a little richer, but you can also use milk chocolate for a creamier fudge or even 50% dark chocolate for an even richer fudge. 
Microwave fudge: If you choose to melt the chocolate in the microwave, make sure you do not melt the chocolate for longer than 30 seconds at a time. Once the chocolate "bakes" you will have to start all over.
Storing the fudge: Fudge can be kept in an airtight container in the fridge or at room temperature.
Firmer Fudge: For firmer fudge, store in the fridge.
