Little balls of heaven! No Bake Oatmeal Balls loaded with protein & other good-for-you stuff are one of our Best After School Snacks! Your kids will ask for these again and again never knowing how healthy they are.
In the bowl of a food processor, combine 1 cup rolled oats, ½ cup semi-sweet chocolate chips, ½ cup flax seeds, ½ cup peanut butter, ⅓ cup honey, and 1 teaspoon vanilla extract.
Pulse until well combined.
Using your hands, form into balls and place on a parchment lined baking sheet, not touching each other.Freeze about 30 minutes until set. Store in refrigerator or freezer. Enjoy!
Notes
If you don't have a food processor, no worries. you can mix everything by hand in a mixing bowl.
If mixing by hand, be sure to purchase ground flax seed and the mini chocolate chip morsels.
Be sure your baking sheet fits inside your freezer.
