Ingredients

  • 1 pound lean ground beef 93% lean or leaner
  • ¾ cup chopped onion
  • 1 ½ teaspoons chili powder
  • 1 teaspoon salt
  • 1 garlic clove minced
  • 1 15- ounce can black beans rinsed and drained
  • 1 14.5- ounce can diced tomatoes undrained
  • ¾ cup instant brown rice
  • 1 cup low-sodium beef broth
  • 1 jalapeño pepper seeded and chopped
  • 1 cup shredded pepper jack or cheddar cheese
  • 2 tablespoons chopped fresh parsley or cilantro

Instructions

  • In a large skillet or sauté pan, cook ground beef, onion, chili powder, and salt. As it is cooking, stir and break up beef to crumble it, until beef has browned, about 5 minutes.
  • Add garlic, black beans, tomatoes (with juice), rice, broth, and jalapeño. Stir to combine.
  • Bring to a boil. Cover and reduce heat to medium-low. Simmer for 20 minutes, stirring after every 5 minutes.
  • Serve topped with cheese and parsley.
