These Gluten Free Blondies are made with gluten free flour, brown sugar and your choice of chocolate mixed in. It is a great alternative for delicious blondies when you are trying to limit your gluten intake.
Brush the bottom and sides of an 8”x8” square baking pan with melted butter, line the pan with a long strip of parchment paper and let the excess hang over the side. Brush the parchment paper with butter as well and add another long strip of parchment paper crosswise. Brush with melted butter again.
In a small bowl, add flour, baking soda and salt, and thoroughly combine with a whisk.
In the stand mixer bowl, cream butter and sugar together with the paddle attachment until light and fluffy.
Add egg and vanilla extract, and beat until combined.
Add the flour mixture and mix on low until just combined.
Fold the chocolate into the blondie batter with a spatula and dump into prepared pan, use the back of the spatular to level the batter.
Bake for approximately 25 minutes until the top is golden brown.
Remove from the oven and allow to cool completely before slicing in to 9 squares.
