Preheat oven to 350°F. Mix apple cider vinegar, soy sauce, and honey together in a bowl and set aside.

In a separate bowl, mix together garlic powder, paprika, salt, and pepper.

Sprinkle the rub over the pork tenderloin on all sides, and pat it down to coat evenly.

Add oil to a large cast-iron skillet over medium-high heat. Add the pork and sear until golden brown on all sides, about 3-5 minutes per side.

Add minced garlic to the skillet. Cook until lightly browned, about 2 minutes.

Add reserved sauce to the skillet over the pork. Use a spoon to spoon the sauce over the meat.
Transfer the skillet to the oven. Roast for 15 minutes or until the pork reaches 145°F on a meat thermometer.
Remove skillet from the oven. Transfer the pork to a cutting board and allow it to rest for at least 10 minutes.
Place the skillet with the remaining sauce back on the stove over medium heat. Simmer until it thickens, about 5-10 minutes.
Remove the skillet from the heat. Slice the pork, then place it back in the skillet with the sauce.
Stir the pork to coat completely in the sauce and use a spoon to drizzle sauce over the top of the pork.
