Foil Pack Salmon

Foil pack salmon made on the grill is ready in no time! Grilled salmon in foil is topped with cilantro lime gremolata sauce for a fresh and flavorful meal.

Ingredients

  • 4-5 salmon fillets
  • 4-5 tsp. olive oil
  • 1 lemon
  • salt and pepper

For The Gremolata:

  • 2 cups fresh cilantro
  • 2 cloves garlic
  • 2-3 large limes zest and juice
  • tsp. red pepper flakes
  • ¼ tsp. salt and pepper

Instructions

  • Prepare charcoal, gas, or any type of grill.
  • Thaw 4-5 salmon fillets if frozen. If not frozen, cut a larger piece of salmon into 4-5 fillets.
  • Tear 4-5 pieces of tinfoil into squares.
  • Place each salmon filet onto one square of tinfoil. Pour 1 tsp. of olive oil onto each filet. Sprinkle with a generous pinch of salt and pepper. Squeeze a lemon wedge onto the salmon and place the lemon on top of the fish.
  • Fold the edges of the tinfoil over the salmon and wrap it up like a small present. Try to wrap it tightly so steam doesn't escape while grilling. Repeat with the remaining pieces of salmon.
  • Place the foil packs on the grill and cook for 10-15 minutes depending on the thickness of the salmon fillets. Thicker fillets will take longer to cook. Check the thickest part of the salmon to see if it has finished cooking. It will turn from red to opaque when done. The safe internal temperature for salmon is 145 degrees.

For The Gremolata:

  • Finely mince 2 cups of fresh cilantro and place in a small bowl.
  • Grate 2 cloves of garlic into the bowl using a microplane or small grater (this will help you avoid large chunks of raw garlic in your dish).
  • Using the same microplane or grater zest 2-3 large limes into the bowl. Cut the limes in half and squeeze the juice into the bowl.
  • Add ⅛ tsp. red pepper flakes and ¼ tsp. salt and pepper.
  • Stir all of the ingredients until completely combined.
  • To serve: Open the foil packets and plate the salmon. Garnish the salmon with a generous portion of the gremolata. Serve with grilled vegetables such as zucchini, asparagus, or peppers and a side such as quinoa or couscous if desired.

Notes

RECIPE TIP: Do not skip the gremolata, as this provides much of the flavor in this dish! Parsley may be substituted for cilantro and lemon can be used in place of limes.
