1 pint cherry tomatoes 2 cucumbers diced ⅓ cup olive oil 2 Tbsp. balsamic vinegar 1 Tbsp. fresh parsley chopped ¼ tsp. salt ¼ tsp. pepper 1 Tbsp. dried oregano ¼ tsp. minced garlic 4 oz. feta cheese crumbled
Slice the cucumbers, and then cut again into fourths so you have small chunks. Add the cucumbers, cherry tomatoes, olive oil, balsamic vinegar, parsley, salt, pepper, oregano, and minced garlic to a bowl and stir to combine. Add the crumbled feta cheese just before serving. Serve cold.
If you prefer, you can swap in fresh mozzarella over feta cheese.
