Ingredients

  • 1 bag tortilla chips
  • 2 cups pulled pork see notes
  • 2 cups shredded cheese
  • 1 jalapeno sliced
  • 1 avocado diced
  • 1/4 cup corn
  • 1 small tomato diced
  • lime juice from 1 lime
  • 1/4 cup red onion diced
  • cilantro to taste
  • 1/3 cup sour cream or Mexican crema optional

Instructions

  • Preheat oven to 400°F.
  • Spread 1 bag of tortilla chips evenly in a skillet.
  • Top with 2 cups of pulled pork.
  • Cover evenly with 2 cups of shredded cheese.
  • Place in the oven and bake for 5-10 minutes until the cheese is melted and the chips are crispy.
  • Remove from oven and add toppings like 1 sliced jalapeno, 1 diced avocado, 1/4 cup corn, 1 diced small tomato, 1/4 cup red onion, cilantro to taste, and lime juice squeezed from 1 lime.
  • Top with a dollop of sour cream or Mexican crema, about 1/3 cup, for extra creaminess.
