Easy Creamy Avocado Deviled Eggs

Ingredients

  • 6 hard-boiled eggs
  • 2 avocados ripe, sliced
  • ½ tablespoon lemon juice
  • ½ teaspoon salt
  • 1 tablespoon mayonnaise
  • Toppings of your choice; ex. bacon, green onions, goat or feta cheese, cherry tomato slices, etc.

Instructions

  • Halve 6 hard-boiled eggs and remove the yolks. Add the egg yolks to a mixing bowl.
  • Add 2 sliced avocados to the bowl with the egg yolks. Smash together with a fork until the mixture forms a crumb-like texture.
  • Mix in 1 tablespoon mayonnaise, ½ tablespoon lemon juice, and ½ teaspoon salt with the egg yolk and avocado mixture. Beat together until smooth and creamy.

Notes

When piping the avocado mixture into your deviled eggs, you will want to avoid chunks of avocado as much as possible. Beat with a fork until the mixture has as few avocado chunks as possible.
