Easy Mexican Street Corn Casserole
Our Mexican Street Corn Casserole recipe uses simple ingredients to turn your favorite elote recipe into the perfect party side dish!
9x13-inch baking dish
- 6 cups frozen corn or fresh if preferred
- 1 cup mayonnaise
- 2 tsp. chipotle pepper ground
- salt and pepper to taste
- 1 bunch green onions chopped, reserve some for garnish
- ½ cup Parmesan cheese
- lime wedges for garnish
- hot sauce to taste, optional
Preheat oven to 350°F. In a large bowl, mix together corn, mayonnaise, chipotle pepper, salt and pepper, and green onions until well-combined.
Spoon corn casserole into a 9x13-inch baking dish greased with nonstick spray.
Sprinkle Parmesan cheese over the dish.
Bake covered for 20 minutes, then uncovered for another 20 minutes. Add reserved green onion, lime juice, and hot sauce if desired. Serve and enjoy!
