- 6 cups frozen corn or fresh if preferred
- 1 cup mayonnaise
- 2 tsp. chipotle pepper ground
- salt and pepper to taste
- 1 bunch green onions chopped, reserve some for garnish
- ½ cup Parmesan cheese
- lime wedges for garnish
- hot sauce to taste, optional
Preheat oven to 350°F. In a large bowl, mix together corn, mayonnaise, chipotle pepper, salt and pepper, and green onions until well-combined.
6 cups frozen corn, 1 cup mayonnaise, 2 tsp. chipotle pepper, salt and pepper, 1 bunch green onions, hot sauce
Spoon corn casserole into a 9x13-inch baking dish greased with nonstick spray. Sprinkle Parmesan cheese over the dish.
½ cup Parmesan cheese
Bake covered for 20 minutes, then uncovered for another 20 minutes. Add reserved green onion, lime juice, and hot sauce if desired. Serve and enjoy!
