Ingredients

  • 1 watermelon your choice of variety - I recommend seedless
  • 1 cup coconut yogurt
  • ½ cup strawberries sliced in half
  • ½ cup cherries optional
  • ½ cup raspberries
  • ½ cup blueberries
  • 3 Tablespoons dried coconut optional

Instructions

  • Start by slicing watermelon using a sharp knife. Cut off a slice of the watermelon about 2 to 3 inches thick, then cut it into 6 wedges.

  • Remove the stems from your strawberries and cut them in half. Set them aside. Using a spoon or a spatula, spread a layer of coconut yogurt around the inside of each watermelon slice. Try to leave a bit of space at the top near the rind to look like a crust.

  • Garnish watermelon with a layer of strawberries, raspberries, cherries, and blueberries as you please. To finish sprinkle some dried coconut on the top of your Watermelon pizza. This is optional, but I love the flavor it adds. Serve immediately and enjoy!

Notes

  • Refrain from using fruits that will brown on top of your pizza, like bananas or apples.
  • I prefer to use seedless watermelons for best results. Watermelons come in different varieties, so pick the one that best suits you.
  • Although I use coconut yogurt, you can use any variety of yogurt you like best.
