Ingredients

For the salad:

  • 2 cucumbers seedless and roughly peeled and sliced
  • 16 radishes thinly sliced
  • 2 cups baby spinach leaves
  • 1 large red onion sliced into half-moons
  • 2 tbs sunflower seeds

For the dressing:

  • ½ cup yogurt plain
  • ¼ cup balsamic vinegar
  • 2 tbs extra virgin olive oil
  • 1 pinch salt or to taste

Instructions

  • In a salad bowl combine all salad ingredients.
  • In a medium bowl whisk together all the dressing ingredients. Taste and adjust accordingly with additional vinegar, oil or salt, if required.
  • Before serving spoon the dressing on top of the salad and mix well.
