Peach Chicken

Easy Peach Jam (makes 1 cup)

  • 3 peaches peeled, pitted, and chopped roughly
  • 3 teaspoons lemon juice
  • ½ cup granulated sugar

For the chicken

  • 1 clove garlic large clove, crushed
  • 2 teaspoons ginger grated
  • Tablespoons soy sauce light
  • 4 teaspoons rice wine vinegar
  • 2 teaspoons mustard powdered
  • 1 teaspoon sriracha
  • 1 lime zest
  • 4 chicken thighs meat only, skin removed
  • Salt and pepper to season
  • 2 Tablespoons vegetable oil
  • 8 slices lime

To serve

  • 1 red chili peppers finely chopped
  • 2 green onions sliced into long strips
  • sliced peaches grilled

Instructions

Making the Peach Jam

  • Add peaches and lemon juice to a saucepan over medium-low heat. Cook for 10-15 minutes, until the peaches soften and start releasing their juices.

  • Turn the heat up to medium-high and add sugar. Simmer, stir, and crush the peaches with a wooden spoon every so often while cooking for 30 minutes.

  • Once ready, the peach jam will have thickened up nicely.

Making the Peach Glaze

  • Mix peach preserves with garlic, ginger, soy sauce, rice wine vinegar, dried mustard, sriracha, and lime zest in a bowl.

  • Stir well, and set aside.

How to Cook Chicken Thighs

  • Trim extra fat from skinless chicken thighs. Cut each thigh into 2 pieces and season with salt and pepper on both sides.

  • Heat vegetable oil in a frying pan over high heat. Add chicken and cook until golden on one side, then flip to cook until golden on the other, about 5-6 minutes per side.

  • Flip the chicken once more and spoon a Tablespoon of peach glaze over top. Smooth it over, allowing some to drip into the pan, and cook for another minute.
  • Flip the chicken once more. Add the remaining peach glaze to the pan, spooning some over each piece.
  • Add slices of lime and cook 2-3 minutes, or until the chicken reaches between 165°F and 175°F on a meat thermometer.

Notes

  • You can use store-bought peach preserves if you don't have the time to make homemade.
  • Homemade peach jam can be stored in the refrigerator in an airtight, sterilized jar for up to 2-3 weeks. To prepare the jars, simply wash them in very hot water. Keep refrigerated.
  • You can also freeze homemade peach jam for up to 3 months in an airtight jar. Leave at least a half-inch of space at the top to account for liquid expansion, and label with the date.
  • Both the jam and the glaze can be made ahead of time to make this recipe even easier to make. The glaze lasts 2-3 days in the refrigerator before it should be used.
