Soy Ginger Chicken Thighs

Soy Ginger Chicken Thighs take my favorite protein and give them an Asian flare.  While this recipe has so many layers of flavors, it's composed of only a few simple ingredients. This recipe is quick and easy to make which is why it is on Sunday Supper's list of Gluten Free Holiday Recipes.

Ingredients

  • 4 Chicken Thighs
  • 1 tablespoon Sesame Oil
  • 1 tablespoon Ginger Minced
  • 1 tablespoon Garlic Minced
  • ½ cup Gluten Free Soy Sauce
  • 1 Leek
  • 1-2 Bok Choy Halved or Quartered Depending on Size

Instructions

  • Combine all ingredients in a mixing bowl
  • Let sit in the fridge for 30 minutes
  • Preheat oven to 375F
  • Heat a skillet
  • Sear chicken, skin side down for about 5 minutes, until golden brown
  • Deglaze pan with remaining marinade from mixing bowl
  • Add the vegetables
  • Transfer to oven and bake for 40-60 minutes until the chicken reaches 165F
