Salad
- 1 lb broccoli florets
- 1 cup shredded carrot
- ½ cup thinly sliced red onion
- 2 large apple sliced
- ½ cup pecan pieces
- ¼ cup dried cranberries
- 1 lb thick cut deli turkey diced
Dressing
- ¾ cup mayonnaise
- ¾ cup nonfat greek yogurt
- 3 tablespoon lemon juice
- 1 ½ tablespoon sugar
- ¼ heaping teaspoon kosher salt
- ¼ scant teaspoon pepper
Cut apples into ¼” slices and then cut the slices in half, crosswise.
Cut the larger broccoli florets into bite size.
Dice the deli turkey into bite size pieces.
Break the whole pecans into smaller pieces by hand or coarsely chop with a knife.
Thinly slice the red onion.
Add all of the salad ingredients into a large mixing bowl.
In a small mixing bowl, whisk together all of the ingredients for the dressing until smooth.
Pour the dressing over the salad and toss well.
Served chilled.
