Double Chocolate Brownie in a Mug Recipe

What could be better than an easy mug cake recipe? Only one thing: an easy mug cake that tastes as delicious as this brownie in a mug!

Ingredients

  • 4 Tbsp. vegetable oil
  • 3 Tbsp. cocoa powder unsweetened or special dark
  • ¼ tsp. salt
  • 6 Tbsp. sugar
  • 1 egg
  • 4 Tbsp. flour
  • ¼ tsp. baking powder
  • 2 Tbsp. white chocolate chips
  • 2 Tbsp. milk or semi-sweet chocolate chips
  • vanilla ice cream and/or whipped cream to serve
  • powdered sugar to serve

Instructions

  • In a coffee mug or other large mug, mix 4 Tbsp. vegetable oil and 3 Tbsp. cocoa powder until you have a thick, chocolatey liquid.
  • Add in ¼ tsp. salt and 6 Tbsp. sugar and thoroughly mix through until smooth.
  • Using a fork, thoroughly mix in 1 egg.
  • Carefully stir in 4 Tbsp. flour and ¼ tsp. baking powder. Thoroughly mix together.
  • Fold in 2 Tbsp. white chocolate chips and 2 Tbsp. milk or semi-sweet chocolate chips until evenly distributed.
  • Microwave for 1 minute. The brownie in a mug will rise, then sink a little bit, and should still be wet to the touch.

Notes

  • Combine with a fork: Use a fork to combine all your mug cake ingredients. It will mix better this way.
  • Add a little flour to the chocolate chips: Mix the chocolate chips together, then sprinkle in a small amount of flour and toss together before adding to the mug. This keeps the chips from sinking to the bottom.
  • Cook time based on microwave: Cook time for your microwave brownie recipe depends on the power of your microwave. The cook time here is for an 800W microwave. If you have a 700W microwave, for example, add an extra 40 seconds of cook time.
  • Use a big mug: Use a big enough mug for your brownie in a cup! If you use too small of a mug, there’s a chance of the brownie mug mix overflowing. Don’t use a small mug.
