Mini Bacon Quiches
Bite-sized mini bacon quiches are the perfect party food for any buffet. They are beautiful to look at and even easier to eat.
- 1 package 15 ounces refrigerated pie pastry crust
- 2 teaspoons all-purpose flour
- 1 egg lightly beaten
- 1/2 pound sliced bacon cooked and crumbled
- 1/2 cup heavy cream
- 1/2 cup shredded Gruyere cheese
- 1/2 cup shredded Swiss cheese
- 1 small yellow onion finely chopped
- 1/8 teaspoon salt
- Dash fresh pepper
Sprinkle each pastry crust with 1 teaspoon flour; place floured side down on a lightly floured surface.
Cut 12 circles from each crust, using a 2-1/2 inch round cutter.
Press one dough round into the bottom and sides of miniature muffin cup pan coated with cooking spray.
In a small bowl, combine the remaining ingredients.
Spoon approximately 1 tablespoon of mixture into each prepared muffin cups.
Bake at 400° for 14-18 minutes or until filling is set. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Yield: 2 dozen.
