Preheat the oven to 400°F. Oil a pan and place the lemon wedges in the bottom. Remove the backbone from the chicken.

Rub oil all over the chicken. Place sauce into a bowl, then use a basting brush and brush the chicken. Sprinkle with salt and pepper.

Place the chicken side up in the pan and roast for 30 minutes. Apply the remaining sauce.

Turn the oven down to 350°F and roast for 20 minutes.

Remove and let it rest. Serve with rice, fries, or slaw and some extra sauce.
