Ingredients

  • 4 Pork chops thick cut
  • 2 lbs Yukon Gold potatoes sliced
  • 1 lb Carrots cut into 2 inch slices
  • 1 Sweet onion sliced thinly
  • 1 cup Chicken broth or more as needed
  • 4 Tablespoons Butter
  • ½ teaspoon Italian seasoning
  • ½ teaspoon Garlic powder
  • 1 teaspoon Salt
  • ½ teaspoon Pepper

Instructions

  • Combine the butter, broth, Italian seasonings, salt, and pepper in a bowl, and warm it in the microwave until everything is combined. Then whisk in the cornstarch until smooth.

  • Slice the carrots and potatoes, then layer them on the bottom of the crock pot. Add in the pork chops, then add sliced onions on top.

  • Pour in the seasoning and broth mixture, then set the slow cooker to LOW and cook for 5 hours.
  • Once cooked, serve the pork chops alongside the cooked vegetables and sauce, and enjoy!

Notes

  • You can use bone-in or boneless pork chops for this recipe! Just make sure they're thick-cut, or else the pork can get dry and tough.
  • You can choose any vegetables you want so long as they're tough enough to be cooked for a long time. Use hard vegetables like yellow squash, rutabaga, parsnips, and kohlrabi for best results!
  • For extra creamy sauce, add a bit of heavy cream once the pork chops have fully cooked.
  • This is a perfect meal for a busy day. Start it during lunch, and it'll be ready by dinner time!
  • No matter what, never set the slow cooker to HIGH to cook pork. This will overcook the pork and make it tough, dry, and unpleasant.
