My Kids' Favorite Sloppy Joe Casserole

Ingredients

  • 1 pound ground beef 80/20
  • 1 pound pasta your choice
  • 4 cups vegetable broth
  • 24 ounces Sloppy Joe sauce or homemade sauce (below)
  • 1 cup corn
  • 8 ounces Velveeta shreds
  • 1 cup cheddar cheese shredded

Homemade Sloppy Joe Sauce

  • 1⅓ cup ketchup
  • cup water
  • 4 tablespoons tomato paste
  • 1 tablespoon yellow mustard
  • 2 teaspoons garlic powder
  • 2 teaspoons chili powder
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes

Instructions

  • Turn on your oven and preheat it to 375°F. While the oven gets hot, put the ground beef in a big pot over medium-high heat. Cook for 7 minutes or until the beef is cooked through. Drain any grease afterward.

  • Add the uncooked pasta, vegetable broth, sloppy joe sauce (or homemade sauce ingredients), and corn together. Cook for 15 minutes, giving it a stir now and then.

  • Mix in the Velveeta cheese until it's all blended, then transfer to a 9x13" baking dish.

  • Sprinkle with 1 cup of shredded cheddar cheese, then bake for 10 minutes or until the pasta is soft enough.

  • If you have parsley(optional), garnish your casserole. Serve and enjoy!

Notes

  • Instead of ground beef, consider using ground chicken, turkey, or even vegetarian plant-based alternatives!
  • Use canned or homemade Sloppy Joe sauce! When I have the time, I love making my own, but other nights are busier and canned sauce is just what I need.
  • Experiment with different cheeses! While Velveeta adds creaminess, other cheeses like Gouda or Colby Jack cheese can offer new flavors.
  • Use your favorite type of noodles for this casserole, or anything you have on hand! I swap between egg noodles, penne, rigatoni, or rotini.
  • Add your choice of extra vegetables! I sometimes include diced onion, green bell peppers, green beans, or garlic.
