Preheat the oven to 400°F, and prepare a pie crust. Scrub the sweet potatoes, pierce them a few times with a fork, and set them on a lined baking sheet.
3 medium Sweet potatoes
Bake the sweet potatoes 1 hour, or until pierced easily with a fork and soft.
Remove the sweet potatoes to let them cool, then peel them and place the flesh in a large bowl.
Reduce the oven to 400°F. In the bowl with the sweet potatoes, add the butter, then mash or blend with a hand mixer until smooth.

Add in the sugar, nutmeg, and cinnamon, and mix until well combined.
1 cup Brown sugar, ½ teaspoon Nutmeg, ½ teaspoon Cinnamon
Finally, add in the vanilla, milk, and eggs, and mix until as smooth as possible. (This can be done in a food processor for easy mixing!)
2 teaspoons Vanilla extract, 2 large Eggs, ½ cup Milk
Pour the mixture into a pie crust, making sure to spread it out evenly. Place in the oven, uncovered, and bake for 1 hour or until set.

Let cool completely, slice, and serve with vanilla ice cream and whipped cream!
