Equipment

  • Blender or food processor

Ingredients

  • 8 oz Pasta
  • 1 large Avocado
  • 1 cup Spinach fresh
  • ½ cup Parmesan freshly grated, divided
  • 2 cloves Garlic
  • ¼ cup Lime juice freshly squeezed
  • 2 Tablespoons Olive oil
  • ½ teaspoon Salt
  • ½ teaspoon Pepper
  • 1 cup Cherry tomatoes optional

Instructions

  • Prepare your favorite pasta to package instructions. Before draining the pasta, reserve a ½ cup of the pasta water. Add a little oil to the drained pasta so it doesn't stick.

  • Slice the avocado in half, then remove the pit and peel. Add the avocado into a food processor, then add half the Parmesan, the olive oil, spinach, garlic, lime juice, salt, and pepper, and blend until smooth. You may need to add pasta water until it's the desired consistency.

Notes

    • I highly recommend fresh limes for the juice in this recipe. Bottled will work, but it will have a much duller flavor than you get from fresh juice.
    • Don't swap the oil out for a different kind! A good quality olive oil is required to ensure the best flavor, as it does a lot of the heavy lifting in this simple recipe.
    • Ripe, fresh avocados are a must! Firm, green avocados will be too hard to blend properly, and their mild flavor won't do as well in sauce. Check out my tips for how to ripen avocados below!
    • The pasta will continue cooking when it's added to the sauce, so make sure to not overcook the pasta. Al dente is perfect!
    • Cherry tomatoes are just one option for added toppings. This delicious pasta is also great with chicken, shrimp, and all sorts of added veggies!
