Dice the avocados into small cubes, then dice the tomatoes, red onion, and cilantro. Seed and mince the jalapeno, making sure to wear gloves.
4 large Avocados, ½ cup Red onion, 1 cup Grape tomatoes, 1 medium Jalapeno, ¼ cup Cilantro
Add all the ingredients to a large bowl. Gently stir to combine without mashing to maintain the chunky texture. For smoother guacamole, mash to your preference.
1 cup Corn, ¼ cup Lime juice, 1 teaspoon Red pepper flakes, 1 teaspoon Sea salt
Serve with tortilla chips and enjoy!
Notes
Fresh, ripe avocados make all the difference! Make sure the avocados are bright green in the center and that there's a little give when squeezed.
Adjust the spice level by using more or less jalapenos. You can even swap them out for Serrano peppers, or remove them entirely and just add a sprinkle of cayenne.
Fresh lime juice contains much more flavor than bottled, and I highly recommend using it in a simple recipe like this!
Adjust the flavor to your preference by adding a bit of chili powder, smoked paprika, or sauteed garlic.
