Preheat air fryer to 400°F. Wash the Potatoes and pat dry.
2 pounds Baby Potatoes
Chop fresh Rosemary, and set aside.
2 Tablespoons chopped fresh Rosemary
Place Oil in medium size bowl, and add Potatoes. Mix with spoon until all are well coated.
2 Tablespoons Olive Oil
Add 1 teaspoon Salt, Pepper, Garlic Powder, Onion Powder, and chopped fresh Rosemary. Mix with spoon, or rub in with fingers. Or, you can use your favorite spices.
1½ teaspoon coarse Salt, ½ teaspoon ground Black Pepper, 1 teaspoon Garlic Powder, 1 teaspoon Onion Powder
Spray air fryer basket with non-stick coating, and place Potatoes in the air fryer basket, careful to keep them from overlapping. If necessary, fry potatoes in batches.
Cook until Potatoes are cooked through and soft when tested with fork, about 15-20 minutes, depending on potato size. Half-way through baking, shake basket to turn potatoes.
While Potatoes are baking, chop Green Onion, and set aside.
1 Green Onion
When done, allow to cool for 3 minutes.
While cooling, sprinkle with chopped Green Onion, remaining Salt (to taste), and grated Parmesan Cheese. Serve warm. Enjoy!
