Keto Chicken Bites

My deliciously crispy, cheesy keto Chicken Bites are easy to make using a handful of simple ingredients in under an hour!

Ingredients

  • 2 cups cottage cheese
  • 1 cup shredded cheddar cheese or mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 pound ground chicken
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper if you want spicy, add red pepper flakes
  • 1 egg

Instructions

  • Set out 1 large bowl and 1 baking sheet lined with parchment paper. Preheat your oven to 400°F.
  • Add cottage cheese, shredded cheese, grated Parmesan cheese, ground chicken, egg, garlic powder, salt, and black pepper to the bowl.
    2 cups cottage cheese, 1 cup shredded cheddar cheese, 1 cup grated Parmesan cheese, 1 pound ground chicken, ½ teaspoon garlic powder, ½ teaspoon salt, ½ teaspoon black pepper, 1 egg
  • Mix the bowl of ingredients together well using your hands.
  • Drop the meat mixture by the spoonful onto the parchment-lined baking sheet. If you want the chicken bites to be flat, spray the bottom of a cup with non-stick cooking spray and lightly press down on the spoonfuls of meat.
  • Bake at 400°F for 25-30 minutes.

To air fry chicken bites, air fry in a preheated air fryer at 400°F for 20-25 minutes.
